When our daughter, Emily Paris, was born, she required medical care and had to spend an extended period of time in the hospital. During those long, emotional days we were overwhelmed with the whirlwind of becoming new parents and gratitude for the care and support our family was receiving. Through that experience, We felt deeply inspired to create something meaningful - something that could help support other families going through difficult times, while also providing for the future of our growing family.
We decided a purpose-driven cookie company committed to family, quality, and giving back was the answer. The result was Emi Paris Cookie Co. Our journey, and the evolution of Emi Paris Cookie Co., can be followed at Instagram.
Our Process
We operate on a weekly bake schedule designed to ensure every box arrives at its peak freshness
Order Ahead
Customers place their orders online throughout the week up to our 7am Sunday cut-off time. This allows us to plan each bake with precision and prepare exactly what is needed, minimizing waste.
Fresh Weekly Bake
Each Monday, we bake and ship the orders received the previous week. By baking to order in small batches, our cookies never sit on shelves or in storage for extended periods.

Anyone can say their cookies are the best but in reality being the best doesn’t come easy. After a ten-month journey of research and development, countless trials, adjustments, and refinements we finally reached what we believe is the finest chocolate chip cookie ever crafted.
What Makes Our Cookies So Special?
Emi Paris Cookie Co. cookies are the result of extraordinary ingredients, patience, and an uncompromising commitment to doing things properly. Some notable highlights include:
Chocolate – Only the finest will do. Our house blend of world-renowned Belgian chocolates gives each cookie a sophisticated depth and richness that is truly second to none.
Butter – We use real, locally sourced, grass-fed butter with a high butterfat content (>84%). It is gently browned to perfection, bringing out its smooth, rich flavour and subtle nutty notes, creating a layered, melt-in-your-mouth experience.
Fancy Molasses – We source molasses made from 100% pure, non-GMO sugar cane juice as the sole ingredient, ensuring uncompromising taste and quality.
Flour – A carefully balanced mix of premium, unbleached all-purpose flour and bread flour is delicately sifted and slowly incorporated during mixing. This keeps the flavour neutral so the butter and chocolate can shine. Perfecting our flour combination gives the cookie its taller structure, crisp edges, and luxuriously soft centre that delivers our signature slow-pull chew.
Salt – Premium fine sea salt is chosen for its purity, consistency, and ability to dissolve evenly throughout the dough. The right amount deepens the vanilla, enhances brown sugar warmth, and sharpens the chocolate’s flavour. For a subtle finishing touch, each cookie receives a light sprinkle of flaky kosher salt.
Eggs – For stability and a creamier chew, we use locally sourced eggs from free-run, free-range, or pasture-raised hens. Happier hens truly do produce better eggs. Each egg is cracked fresh during dough preparation to ensure optimal quality and freshness.
Maturation – Allowing the dough to rest and chill for 18+ hours enables the ingredients to interact in ways that dramatically improve flavour and texture. This maturation period deepens flavour, hydrates the flour, and results in a thicker, softer, more decadent cookie.
